It's been a while since I've posted, but I have been cooking up a storm with all of our tomatoes! We've finally been getting a lot of tomatoes all at once, so I've been able to make pasta dishes, sauces, and more (check out my recipes here). The big boy tomatoes seem to be the juiciest, and we've been eating those fresh with a bit of salt, pepper, extra virgin olive oil, and some fresh bread. They have been so tasty - I hope we continue to get them for another month or so.
I used my Grandma Watkins' crock-pot for my pasta sauce, and I was trying to think of what she would have made in it. She didn't make Italian food from scratch, but I wouldn't be surprised if she used it for soups or the turkey she used to make for Christmas. I've also been thinking about my Grandpa Watkins, because we finally have an acorn squash! It's smaller than the ones in the stores, but I'm betting it's packed full of flavor. I'll have to decide how I want to prepare it. I actually made some acorn squash last Christmas with my brother-in-law Matt, and it turned out amazing. Although, that's no surprise when Matt is in the kitchen!
The garden is producing quite consistently now, and I've loved everything I've tried from it: different tomatoes, green peppers, banana peppers, shishito peppers, and many herbs. We have a couple of strawberries turning red now, and we're excited to try those soon. We also found a little friend in living in our parsley - a caterpillar! She's been there for over a week now, and it looks like she's getting a little chubbier. I hope the garden is giving her sustenance and I wonder if she'll build her chrysalis on the parsley too.
