Learning to make fresh vegetarian meals has changed my life.  Before becoming vegetarian about seven years ago, I was one of the pickiest eaters you may meet.  Expanding my culinary tastes has been fun, nerve-wracking and so fulfilling.  Flavor is everything!

Hash

As a good Minnesotan-grown avid potato lover, breakfast hash is one of my favorite easy breakfasts.  Potatoes, kale, eggs and a bit of paprika makes breakfast deliciously fun, even for those of us who are not fond of the morning!

Pizza

I'm convinced that pizza is an underrated love language. I love making sauces and customizing dishes to the fullest, and for me, an arrabitata sauce is the way to go.  Also, pineapple on pizza is a must!

Dumpling Soup

Homemade veggie broth and pasta is a dish that I cannot love enough.  Turn on some music and take the time to cook with lots of seasoning, lots of patience and lots of heart!  You won't regret it.
